Asian style Pork Belly served with Asian greens and a crispy fried egg

Serves 5

A guaranteed crowd pleaser!!

Ingredients

  • 5 free range eggs
  • 1kg whole piece of Pork Belly
  • 1 onion
  • 1 carrot

Masterstock

  • 1 knob of ginger
  • 5 garlic cloves
  • 2 star anise
  • 1 cinnamon quill
  • 200mls dark soy sauce
  • 100mls chinese wine
  • 2 red chillies
  • 1 coriander root
  • 2 ltrs of water

Stir Fry

  • 1 bunch pak choy
  • 1 bunch bok choy
  • 1 pkt baby corn
  • 100 grams snow peas
  • 1 bunch broccolini
  • 1 bunch spring onions
  • 2 tspns oyster sauce
  • salt and freshly ground pepper 

Method

This recipe requires you to make a Masterstock, a Masterstock can last a very long time and can be used over and over again. The flavour intensifies after each use. There are stories of some Masterstocks being even over a hundred years old in China.
 

  1. Pre heat your oven to 180 degrees Celsius.
  2. In a pot, add the water and then the rest of the ingredients for the Masterstock. Turn onto a high heat, bring to a boil then turn down and simmer for an hour. 
  3. Score the skin of the Pork Belly in a criss cross way, turn over and season the meat. Roughly chop the onion and carrot and put at the bottom of a deep oven tray. Place the belly on the veg, skin side up. Rub some veg oil into the skin. 
  4. Strain the Masterstock and pour into the tray, do not cover the skin of the Pork Belly as we want nice crackling. Place in the oven and cook for 1.5 to 2 hours, checking after half an hour then every 15-20 minutes.
  5. When the pork is cooked (the meat should be nice and tender) the skin should be nice and crackly. Stir fry the vegetables with a little ginger, garlic, sliced red chilli and the oyster sauce.
  6. In a deep saucepan, heat some oil and crack your eggs in one by one, cook until crispy yet still soft in the and runny in the middle.
  7. Portion up the Pork Belly and serve with your stir fried vegetables and your fried eggs on top. For that little bit extra, cook some steamed rice and enjoy! Yummy!!
