Sweet French toast with berry compote
Ingredients
2 free range eggs
20mls cream
1tspn of vanilla essence
25 grms caster sugar
1 thick slice of Brioche
20 grms butter
dollop of double cream
3 strawberries
30 grms blackberries
30 grms raspberries
120 grms caster sugar
30 mls water
drizzle of maple syrup
Method
Crack the eggs in a small bowl, add the cream and whisk. Add the vanilla essence and sugar and whisk some more.
Cut the strawberries and put in a small pot, add the blackberries, raspberries, sugar and water and put on a high heat. Bring to the boil and cook for 2 minutes, set aside to cool.
Dip the brioche into the egg mix, melt the butter in a pan. Cook the brioche on each side for 2-3 minutes until golden brown.
Serve the toast with the compote, a dollop of double cream and a drizzle of maple syrup. Heaven!!
